Aaron defines what the heart rate is and what the resting heart rate is. What is the fastest rate your heart beat safely is: 220 – your age = 100% heart rate reserve.

There are two different zones: fat burning and anaerobic. The fat burning zone is 100% number times .60 (which is 60% of your 100% max). The upper range of the fat burning zone is 100% times  .75 (which is 75% of your 100% max). You will be using fatty acids or stored fat to keep going when you are in this zone.

If your heart is beating faster than that upper number, your body is using muscle, glucose, and glycogen as energy which is the anaerboic zone. Aaron displays a chart with the information about target heart rate.
