The Glycemic Index (GI) is a scale ranking how much and how fast your body releases glucose when handling specific carbohydrates. The GI indicates how much and how fast your body is releasing glucose to handle a specific carb.

Lower glycemic index foods like sweet potato release a slow and steady level of glucose. The higher glycemic index foods like a candy bar dump glucose and spike insulin levels. A whole grain piece of bread has 42 GI and a baguette has 95 GI, which is a big difference of what happens to your body. Aaron Marino of alpha m. advises keeping the GI around 60 GI. If you want to lose body fat, keep the GI on the low end.
